We all know we should be eating more veggies each day but many people really struggle with being creative around vegetables and pulses. I have taken the hard work out of this by bringing you some of my speedy, favourite veggie recipes and snacks. Why not challenge yourself for the next 30 days to either go fully Veggie or to enjoy these dishes alongside meat and fish.
If you don't want to go all-in, you can still eat meat and fish and use the veggie recipes to eat alongside. Either way, your body and brain will thank you for the increase in fibre, antioxidants and multiple other vitamins and minerals that vegetables contain.
Aim for plenty of colour and varietyon your plate every day as our gut microbiome LOVES variety. Remember, a healthy gut means a stronger immune system, clearer skin, better sleep, good mood and many many more benefits.
